Cabernet Sauvignon 2021

Though technically 88% Cabernet Sauvignon, the flavor is all “Cabernet”. 11% Malbec and 1% Merlot were added for a little flavor complexity. The grapes were sourced from the Horse Heaven Hills AVA of Washington state – primarily from the Culloden Vineyard owned by the Mercer family. After fermentation and settling, the wine was transferred to American oak barrels for 18 months of aging. The result is a classic Cabernet Sauvignon that tastes great now and will age well for a decade, with peak flavor around 2027.

FOOD PAIRING: Pairs well with game, ribeye, roasted meats, beef stew, a rack of lamb, olives, and bittersweet chocolate.
