Pinot Noir

The grapes for this Pinot Noir were grown in Santa Barbara County, California along with some Grenache and Mourvèdre. The Noiret grapes were grown in Kenton, Tennessee at White Squirrel Vineyards. We added Grenache, Mourvèdre and Noiret to this wine to add structure (tannins), color and flavor complexity. 75% of the blend was aged for one year in stainless steel tanks fitted with French (Burgundian style) toasted oak tank staves. Oak aging added spice, smoke, and coffee notes. The Pinot Noir itself was aged in French Burgundy barrels for 12 months.

FOOD PAIRING: Pairs well with lamb, duck, and roasted chicken recipes; Charcuterie and other cold meats; roast pork with herbs, Italian recipes, goat cheeses, mild hard cheeses.
