The grapes for this Riesling were sourced from several vineyards in the Columbia Valley of Washington – one of the best places in the world to grow Riesling. The juice was gently extracted and slowly cold fermented at 54°F in stainless steel tanks to intensify its natural fruit flavors. Fermentation was stopped short of dryness so that some natural sugar remained to offset the wine’s naturally high acidity. There is no need to age this wine because it tastes wonderful now. However, when aged, the flavor changes from fresh citrus & nectarine to more mellow flavors of green tea & honey.
